Date Slice

Cane sugar free, wholemeal, dairy free

Ingredients

– 240 grams wholemeal self-raising flour
– 12 medjool dates
– 55 grams walnuts, chopped
– 55 grams pecans, chopped
– 1/2 cup desiccated coconut (plus extra)
– 110 grams grapeseed oil
– 110 grams honey
– 2 eggs, lightly beaten
– 2 tsp vanilla extract

Method

1. Preheat oven to 180 degrees Celsius (fanforced)
2. Combine sifted flour (add meal left in sifter back in), dates, walnuts, pecans and coconut
3. Make a well in the centre, add eggs, oil, honey and vanilla and mix well
4. Spoon mixture into greased and paper lined 8 inch square slice tin, press lightly and sprinkle extra coconut over the top
5. Bake in oven for about 30 minutes (inserted skewer should come out clean)
6. Cut into slices while still hot and cool in tin
7. Store in an airtight container when completely cooled for up to a week
