Sweet Potato Salad

Sweet Potato Salad

Serves 2


– 1/2 sweet potato, cut into bite sized pieces
– 2 Large handfuls mixed baby rocket and baby spinach
– 1/4 red capsicum, sliced lengthways
– 10 cm piece of cucumber, sliced into circles
– 1/2 avocado, cut into squares
– 2 tbsp pine nuts
– Fetta (I used a herb and garlic fetta but any kind is fine)
– Olive oil (approx. 2 tbsp)
– 1/2 lemon
– Rock salt and pepper
– Ground cinnamon


1. Preheat oven to 200 degrees fanforced
2. Drizzle an oven tray with olive oil (approx 1 tsp), place pieces of sweet potato in the tray and season with salt, pepper and cinnamon to taste, shake tray to coat sweet potato evenly
3. Cook sweet potato in the preheated oven for 20-30 minutes (a fork should slide through potato easily)
4. While potato is cooking, use a small saucepan with a dash of olive oil to brown pine nuts then put aside
5. Cut up all salad ingredients as directed in ingredients section
6. Place spinach and rocket, capsicum, cucumber, avocado, fetta, sweet potato and pine nuts into two bowls
7. Drizzle a small amount of olive oil and squeeze a small amount of lemon juice over each salad and season with salt and pepper to taste

  1. Hi I made this salad tonight & OMG!!! Sensational! But I think next time ill need to put more cinnamon & salt. Thanks for that.
